Beetroot leaves (Beta vulgaris) are known to be a great source of antioxidants but are commonly discarded as agricultural waste. This study explored the ultrasound-assisted green extraction of antioxidants from Beetroot leaves; optimal extraction parameters were identified using varying solvent systems and temperatures. The antioxidant activities of the extracted bioactive phenolic compound were investigated using DPPH analysis, and the identity of the extracted compounds was analyzed using HPLC-MS. All antioxidant studies were done in triplicate for statistical validation. In this presentation, we will present our results on identifying an environmentally friendly and cost-effective ultrasound-assisted green extraction method and the future directions of this project.
